Senior Sous Chef
Swillhouse is searching for an accomplished Senior Sous chef to join the pre-opening team at our new venue, Le Foote, due to open in July. This is an exciting career opportunity to be part of the menu planning, recipe testing and team building of a highly anticipated opening, alongside our talented Head Chef, Stefano Marano.
Located in the historic heart of Sydney, Le Foote is a European inspired wine bar and restaurant, and the newest addition to Swillhouse; owner/operators of Alberto's Lounge, Restaurant Hubert, Frankie's Pizza, The Baxter Inn and Shady Pines Saloon.
Le Foote will be modelled on the all-day eating and drinking cultures of Amsterdam, Paris and Rome, particularly their cafe’s, outdoor eateries, and culture of quiet enjoyment of life.
Housed in one of Australia's oldest buildings, our wine bar features cobblestoned walkways, heritage balconies and al fresco street dining, with an extensive all day menu. In addition, there will be an 80-seat courtyard restaurant centred around a custom Josper grill, which will be producing beautifully grilled vegetables, dry aged steaks and some of Australia's finest seafood.
We are looking for someone with extensive cooking experience of at least Senior Sous Chef level. This role requires a chef who can lead a team, problem solve, mentor junior staff and who has the capacity to manage the entire kitchen operation in the absence of the Head Chef. Experience cooking over fire is preferable, but not a prerequisite.
More importantly, we are searching for somebody who will help create a positive and professional team culture, centred around learning, knowledge and a passion for hospitality.
