Swillhouse is looking for an Assistant General Manager to join the pre-opening team of its exciting new venue, Le Foote, launching in July 2022.

Located in the historic heart of Sydney, Le Foote is a European inspired wine bar and restaurant, and the newest addition to Swillhouse; owner/operators of Alberto's Lounge, Restaurant Hubert, Frankie's Pizza, The Baxter Inn and Shady Pines Saloon.

Swillhouse is searching for a Head Sommelier to join the opening team for its newest venue, Le Foote, due to open in August.

Located in the historic heart of Sydney, Le Foote is a European inspired wine bar and restaurant, and the newest addition to Swillhouse; owner/operators of Alberto's Lounge, Restaurant Hubert, Frankie's Pizza, The Baxter Inn and Shady Pines Saloon.

The venue will feature a relaxed wine bar, offering a substantial menu and also an 80-seat courtyard restaurant, which will be centred around a Josper charcoal grill, producing dry aged steaks, beautifully grilled vegetables and some of Australia's finest seafood.

Our wine focus will be on the icons and classics of Europe, the wider Mediterranean and Australia, while still remaining enthusiastic about talented new winemakers and bottlings of anything that’s truly delicious from around the world.

The Head Sommelier will work closely with Swillhouse's Wine Director to create and manage our list of around 350 wines. Leading a small team of passionate sommeliers, they will also be responsible for training, mentoring and managing all team members at Le Foote.
