Since opening in December 2023, The Caterpillar Club has become renowned for its electric atmosphere and eclectic celebration of world music, great drinks and late night food. A truly unique live music venue with performances six nights a week showcasing talent from Australia and abroad. Some of Sydney’s best DJ’s spin vinyl daily drawing from our curated collection of 12,000 records and their own deep crates. The venue offers an experience unlike anything else in the city.

About the Role

As Bar Manager, you’ll play a pivotal role in shaping the guest experience and leading our team. Reporting directly to the General Manager, your responsibilities will include:

  • Leading and inspiring a high-performing team during fast-paced, late-night services.
  • Overseeing a high-volume, cocktail-focused beverage program, ensuring impeccable quality and consistency.
  • Contributing creatively to our drinks menu while maintaining the high standards that define us.
  • Building a positive, inclusive team culture centered on growth, collaboration, and a shared passion for hospitality.

We’re committed to supporting work-life balance with a 4-day workweek. While some late-night shifts are part of the job, you’ll have the time to recharge and enjoy life outside of work.

Senior Sous Chef

Swillhouse is searching for an accomplished Senior Sous Chef to join the team at Le Foote, a Mediterranean grill and wine bar. This is an exciting career opportunity to be part of the senior team of an award winning and quality focussed kitchen.

 

Located in the historic heart of Sydney, Le Foote is a European-inspired wine bar and Mediterranean Grill, and is brought to you, by the owner/operators of The Caterpillar Club, Alberto’s Lounge, Restaurant Hubert, The Baxter Inn and Shady Pines Saloon.

Housed in one of Australia’s oldest buildings, the venue is centred around an 80-seat courtyard restaurant featuring a custom Josper grill, which produces beautifully grilled vegetables, dry-aged steaks and some of Australia’s finest seafood.

We are looking for someone with extensive cooking experience with at least 3 years experience at Sous Chef level. This role requires a chef who can lead a team, problem solves, mentor junior staff and who has the capacity to manage the entire kitchen operation in the absence of the Head Chef. Experience cooking over charcoal is preferable, but not a prerequisite.

Most importantly, we are searching for somebody who will help foster a positive and professional team culture, centred around learning, knowledge and a passion for hospitality. This is a fantastic next career move for someone interested in progression and having creative input to an exciting and dynamic kitchen. The role also offers the successful applicant the opportunity to be mentored by our collaborative and talented Executive Chef, Brendan Fong.

Swillhouse has a rare and exciting opportunity for career-oriented bartenders to join the opening team of our newest venture, The Caterpillar Club – a stunning cocktail bar and live music venue like no other. This is a full time, salaried position, paying $70,000 per annum plus superannuation.

The Caterpillar Club will be located in the heart of Sydney, providing a subterranean refuge for lovers of beautifully prepared drinks, rare vinyl records and a rotation of local and international live acts. There will also be a concise and punchy food offering, inspired by the supper clubs of London, New York and Paris.

Celebrating the classic to the off-piste, the venue will feature an extensive seasonal cocktail list, a back bar with over 1,000 labels, and a wine list featuring Champagne, orange wines, and iconic producers from the new and old worlds. Icy cold craft ales from our favourite breweries will also be available on tap.

We are searching for accomplished bartenders with proven experience working in quality driven venues, who have a passion for delivering exceptional bar service.
