About the Role

As General Manager of Restaurant Hubert, you are responsible for leading one of Sydney’s busiest and most dynamic restaurant operations.

This is a hands-on role requiring a visible presence on the floor, leading service from the front while maintaining a strong focus on commercial performance, operational excellence and team development. You will oversee a large and diverse team, balancing the demands of a high-volume business with the attention to detail that define the Hubert experience.

  • Leading the venue through active, floor-based management across lunch and dinner services

About the Role

Reporting directly to the General Manager, you will lead one of Sydney’s most distinctive late-night venues, balancing exceptional hospitality, premium beverage experiences and the unique operational demands of live entertainment and late-night trade.

  • Leading the venue end-to-end, setting the tone for service, culture and performance
  • Being present on the floor, driving service standards and guest experience during peak periods and late-night service

About the Role
