Chef De Partie – The Caterpillar Club

We are offering the rare and exciting opportunity for a career oriented Chef de Partie to join the pre-opening team for this project, which is due to open in early December.

The Caterpillar Club will deliver world class food and cocktails, served within a stunning live music venue like no other.

Showcasing an eclectic selection of world music, with DJs spinning vinyl from our collection of 10,000 records and live acts from Australia and abroad, this is an opportunity to work on a truly unique project.

One of Sydney’s most exciting chefs, Isobel Little will lead and oversee the kitchen, curating a menu inspired by the wine bars and supper clubs of London, New York and Paris. Celebrating the classic to the off-piste, the venue will feature an extensive back bar, drinks with a seasonal cocktail focus, and a wine list featuring Champagne, orange wines, and iconic producers from the new and old worlds.

We are looking for passionate and professional chefs with 3 years previous experience in a Chef de Partie position who are well versed in technique, with an in-depth understanding of kitchen systems and above all, a passion for service and the restaurant industry.

Cocktail Bartenders – The Caterpillar Club

Swillhouse has a rare and exciting opportunity for career-oriented bartenders to join the opening team of our newest venture, The Caterpillar Club, due to open December – a stunning cocktail bar and live music venue like no other. This is a full time, salaried position, paying $70,000 per annum plus superannuation.

The Caterpillar Club will be located in the heart of Sydney, providing a subterranean refuge for lovers of beautifully prepared drinks, rare vinyl records and a rotation of local and international live acts. There will also be a concise and punchy food offering, inspired by the supper clubs of London, New York and Paris.

Celebrating the classic to the off-piste, the venue will feature an extensive seasonal cocktail list, a back bar with over 1,000 labels, and a wine list featuring Champagne, orange wines, and iconic producers from the new and old worlds. Icy cold craft ales from our favourite breweries will also be available on tap.

We are searching for accomplished bartenders with proven experience working in quality driven venues, who have a passion for delivering exceptional bar service.

This role is suited to someone who is dedicated to the craft of bartending and wishes to build on their already excellent foundations. You will be working alongside a team of Sydney’s best Bar Managers who are experienced, supportive and committed to your further progression and success.

Chef De Partie

Alberto’s Lounge needs a talented Chef de Partie.

We are looking for chefs with a minimum of 3 years experience in similar venues, with a solid grounding in Italian cuisine. We offer a four day roster (three days off), competitive pay and an excellent workplace culture.

Our food is classic Italian inspired, with a focus on seasonality, technique and simplicity. A menu that speaks to warm Italian hospitality, seasonal ingredients and generosity of flavour. Frequently evolving and with delicious weekly specials, Alberto’s menu showcases some of Australia’s finest artisanal producers and suppliers.

We are seeking a Chef de Partie with experience cooking on every section in the kitchen and who is able to work well within a small and dedicated team.
